KISS OF IRON People's Choice Chili

MEAT
1 3lb top round roast - cut into 1/4 inch cubes (or use 2 lbs of chop meat)

VEGETABLES
4 Medium size onions - chopped
3 Green or Red bell peppers - chopped
3 Cloves of Garlic, finely chopped
5 Jalapeno Peppers, finely chopped
1 Habanero Pepper, finely chopped (optional)

SPICES AND HERBS
6 tablespoons of Chili Powder
3 tablespoons of Cumin
1 Teaspoon of:
Oregano,
Garlic Powder,
Cayenne Powder, 
Paprika
2 Tablespoons of Salt
2 Tablespoons of Black Pepper
2 Tablespoons of Brown Sugar

CANNED ITEMS
Beans (optional) Black beans, small pink or red beans
1 small can of green chilis
1 15oz can of crushed tomatoes
1 small can of beef broth

OTHER
Bottle of Beer
Holy Hannah Habanero Pepper Sauce

Directions:
Brown Meat and drain fat
Return to pot and add Onions, garlic and Green or Red Peppers
Add Hot Peppers
Cook vegetables until tender
Add Chili Powder and Cumin
Add the remainder of the spices
Add the tomatoes and the beef broth
Add the beer and Hot Sauce

Let simmer for at least 40 minutes and then test the meat for tenderness
Taste test for spice and adjust Chili powder, salt, cumin to taste.
Add more heat if desired with cayenne powder, fresh habaneros or hot sauce.

Add beans for the last 30 minutes of cooking time once the meat and spices are to taste.
Adjust spices again and cook for another 10 minutes.
